This moist and delicious cake from food blogger Amy Johnson is just what the doctor ordered.
For the Cake 1 1/2 cups Dr Pepper 1/2 cup vegetable or canola oil 1 stick salted butter (8 tablespoons) 4 Tbsp. cocoa powder (Johnson uses Hershey’s Special Dark) 2 cups sugar 2 cups flour 1 tsp. baking soda 2 eggs 1/2 cup buttermilk Preheat oven to 350 degrees F and grease or spray a 13 x 9 x 2″ baking pan.
In a saucepan over medium heat bring the Dr. Pepper, oil, butter and cocoa powder just to a simmer. Stir to combine all ingredients and remove from heat. In a separate bowl, mix together dry ingredients and add to saucepan. Gently stir to combine being careful not to over-mix. In a small bowl, lightly beat the eggs and buttermilk together, then add to the saucepan and stir until just incorporated. Pour into greased baking pan and bake until a toothpick inserted into the center of the cake comes out clean, about 23-28 minutes.
For the Chocolate Frosting 1 stick salted butter (8 Tbsp.) 4 Tbsp. cocoa powder 8 Tbsp. milk 4 cups confectioners’ sugar
In a saucepan, combine butter, cocoa powder and milk together over medium heat, stirring occasionally until melted and smooth. Add in the powdered sugar a little at a time, combining after each addition until smooth. Pour over warm cake.
