6-8 peeled, medium-sized beets
3 cups sugar
Place beets and sugar in a medium pot. Add just enough water to cover and cook over medium heat until beets are semi-soft, about 30 minutes. Remove from heat and strain the syrup into a clean jar. Let cool before using and keep refrigerated for up to 2 weeks.
